Almond milk was used as a milk substitute in Greece, Egypt, and Rome during ancient civilizations. Mostly used by people who were unable to digest dairy milk due to lactose intolerance or milk allergies. In recent times, almond milk has become increasingly popular as an alternative to plant-based milk. It’s available in supermarkets and is enjoyed by both young and old.

In the world today, Almond milk can be a versatile and delicious addition to your diet in so many ways;

  • It’s first a substitute for dairy milk in many recipes, such as in oatmeal, cereal, or baked goods.
  • Some people like to drink it plain, while others like to add it to smoothies, tea or coffee just like me.
  • Almond milk can be used in soups or sauces, to add a rich, nutty flavour to your meals.

How I Learned to Make Almond Milk From My Best Friend

Last week I put a call through to Esther, I told her about my weight loss journey and how I have been intentional about taking plant-based milk. I told her about how I have made coconut milk and tigernut milk. She was so excited about my progress and said, Grace, how about adding Almond milk to your plant-based milk choices? Oh! That’s great but I have no Almonds at home. Not a problem, I have some in my kitchen, she said. We fixed the next day which was a Saturday at noon in her house for the cooking lesson. I hung up the call and I was so glad about the offer. I did my findings, googled it and learned more about almonds so that I can stay informed and of course gist you guys about it.:)

I got to her place some minutes before noon, she was amazed I keep to time. She had already soaked the almond overnight, so as not to waste too much time and also for easy blending. 

I tried to help her out in the kitchen as she began by gathering all of the ingredients she would need; 2 cups of raw almonds, 4 cups of water, a pinch of salt, and 5 medjool dates for sweetness.

Esther started by draining the soaked almonds and placed them in a blender along with four cups of water. She added a pinch of salt and the  medjool dates, and then blended the mixture until it was smooth and creamy.

Now, she poured the almond milk mixture through a cheesecloth-lined strainer into a large bowl. She then used a wooden spoon to press the mixture through the cheesecloth, extracting as much milk as possible. 

Next, Esther poured the almond milk into a clean mason jar and we got exactly 4 cups of milk and then placed the milk in the refrigerator to chill. After a few hours, the milk was ready to be enjoyed.

She served the homemade almond milk in two glasses and handed me a cup for me to sip. Oh, my days! I was amazed at how delicious it was. It was very rich and creamy, with a subtle sweetness from the Medjool dates. Deep down, I said to myself I’m gonna make this recipe very soon.

We then placed the chaff in a preheated oven to dry at over 350 °C stored in an airtight container for later use in cakes, muffins or smoothie recipes. You might want to check how I make coconut flour using the same method.

Ingredients

2 cups slivered Almonds, soaked

4 cups of water

a pinch of salt

5 medjool dates, pitted

Instructions

  • Soak the almonds for about 12 hours or preferably overnight and drain. Make sure you cover the almonds with water very well for easy blend.
  • Add the soaked almonds to your blender and blend for 2 minutes or until the water is cloudy and the almonds are smooth.
  • Now, pour the almond milk mixture through a cheesecloth-lined strainer into a large bowl. Be sure to press down the mixture through the cheesecloth, to extract as much milk as possible. 
  • Pour almond milk into a glass or container and store in the fridge for an hour or for 3 days
  • Enjoy almond milk as is or use it in a recipe of your choice. You can add to your smoothie recipes or your delicious breakfast option

Yes, Almond milk can curdle when you add coffee or acidic fruits such as lemon or lime to your recipe which can make it coagulate. That doesn’t mean it has go bad, the nutrients are still preserved, the only thing the separation and curdling cause is in the appearance in your cup

Almond milk is the best alternative to dairy milk. Unsweetened ones are very low in calories and sugar while providing vitamin E to the body. Almond milk is very low in protein but high in unsaturated fat.

    Your fresh almond milk could last 2-3 days refrigerated. This is because it has no preservation. It’s organic.

    Yes, it is worth the cost when compared to store-bought and it’s easy to produce. When you get your almond nuts, soak in water and then blend, sieve and your milk is ready:)
